Part 1
2 cups flour
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp cardamom
1/4 tsp nutmeg, grated
1 1/2 cups sugar
1/2 tsp vanilla
1 tsp baking powder
Part 2
4 eggs
1 cup applesauce
1/2 cup kefir or natural yogurt
Part 3
1 cup walnuts, chopped
4 medium carrots, grated
orange or lemon zest
For decoration (optional)
powdered sugar or jam or cream
Preheat oven to 180°C.
In a bowl, mix Part 1 - flour, cinnamon, ginger, cardamom, nutmeg, sugar, vanilla, and baking powder.
In another bowl, mix Part 2 - eggs, applesauce, and kefir (or natural yogurt).
Stir in Part 3 - walnuts, grated carrots and zest.
Combine all ingredients (Parts 1, 2, and 3) mix well.
Pour into a greased baking pan.
Bake for 30 minutes, or until a toothpick inserted comes out clean.
Let cool, then decorate (opt).
